Kroppkakor (Filled Dumplings)

Ingredients for 4 - 6 servings
Swedish Kroppkakor10 medium-sized potatoes
2-3 egg yolks
150g flour
1tsp salt
1 onion
200g salt pork
2tsp cracked allspice


Preparation
 
Peel and boil the potatoes, mash them and mix with the egg yolks and salt.

Let the puree cool, then mi in the flour.  Knead the dough thoroughly and shape into a roll.

Chop the pork into small cubes and dice the onion.  Fry the pork and onion quickly and mix with the allspice.

Cut the potato roll into 2cm thick slices, make a depression in the middle of each slice and fill with the pork mixture.  Flatten each dumpling so the pork mixture is in the middle and roll into a smooth, even ball.

Boil the dumplings slowly in a pot of lightly salted water without a lid for 5-6 minutes after the dumplings rise to the surface

Chipotle Sweet Potatoes

Ingredients

  • 3 large sweet potatoes (about 2-1/2 pounds), peeled and cut into 1/2-inch cubes
  • 1 cup balsamic vinaigrette, divided
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup minced fresh cilantro
  • 3 tablespoons honey
  • 2 chipotle peppers in adobo sauce, minced

Directions

  • Place sweet potatoes in two greased 15-in. x 10-in. x 1-in. baking pans. Drizzle with 1/2 cup vinaigrette and sprinkle with salt and pepper; toss to coat. Bake at 400° for 25-30 minutes or until tender, stirring once. Cool slightly; transfer to a large bowl.
  • In a small bowl, whisk the remaining vinaigrette with the cilantro, honey and chipotle peppers. Pour over potatoes and gently stir to coat. Yield: 8 servings.
