Mexican Breakfast Casserole

I love that we had a breakfast theme this month - great ides, Whitney! I decided to make a Mexican Breakfast Casserole I found on foodnetwork.com. I was really excited to try a breakfast casserole because I love the idea that you can make it the night before and bake it in the morning - I bet you could make it and then freeze it too, but our freezer is so small it would never work. I think this would be perfect for big family gatherings with hearty eaters and for those lovely hungover mornings.

I found all of the ingredients at Trader Joe's and found it was really easy to put together (probably because I did not roast the peppers or cook the sausage.) :)

I made the following changes to make the dish easier:
- Peppers in a jar that were skinned and roasted
- Pre-cooked sausage and just added it in

I made the following changes to make it healthier:
- Egg Beaters (egg whites) instead of real eggs
- Chicken sausage instead of real sausage
- Non fat milk instead of half and half
- Low fat Mexican cheese mix


The other dishes were amazing too! It is always great to see you all and I am already looking forward to next month!
